The old Cabernet Sauvignon vines at Woodstock are low-yielding but deliver intensely concentrated flavours. The estate-grown fruit is destemmed and crushed into stainless steel fermenters, where it undergoes a careful 5-day fermentation, with twice-daily pump-overs to extract optimal colour and tannin structure without any bitterness or over-extraction. After fermentation, the wine is aged for over 14 months in a blend of new and seasoned American and French oak hogsheads, adding both softness and complexity.
While McLaren Vale is famed for the lush, generous mid-palate of its Shiraz, this richness shines just as brilliantly in Woodstock's Cabernet Sauvignon.
