Voyager Estate Sparkling Chenin Blanc

Crafted entirely from hand-harvested Chenin Blanc, this wine begins with whole-bunch pressing to minimize skin phenolics. The juice is settled overnight before undergoing fermentation in stainless steel tanks, with a cool ferment preserving the fresh fruit aromatics. A touch of complexity is added with 5% of the wine fermented in a new French oak puncheon.

Following fining and filtering, the wine is tirage bottled in June for secondary fermentation and then rests on lees until February of the next year, developing additional complexity and a refined effervescence.

The nose reveals enticing aromas of lime, sherbet, red apple skin, and sourdough. On the palate, it offers vibrant, crisp citrus and pome fruits, complemented by a light phenolic grip.
