The Pecorino grapes are hand-harvested, carefully transported to the winery, and meticulously sorted and cooled. They are then gently pressed, with the most clarified for up to 48 hours. Post-fermentation, the wine is stored in oxygen-free stainless steel tanks to preserve its depth and richness.
