Sato La Ferme de Sato Les Blanches Chardonnay

Whole bunch grapes were gently foot-crushed in bins before undergoing an overnight press in a traditional vertical basket press. No enzymes, no additives, and no added SO₂—just pure, unadulterated expression. After a two-day settling, the juice was transferred into a single carefully chosen 500L puncheon, where a natural fermentation spontaneously began. A few bâtonnage stirrings in late autumn invigorated the native yeasts, with fermentation wrapping up before winter and natural malolactic fermentation completing in spring.

This is a generous, beautifully structured Chardonnay, showcasing the remarkable purity of fruit. Its balance and depth make it a standout now, yet it holds the pedigree to evolve gracefully in the cellar, revealing even greater nuance with time.
