Ros Ritchie Cabernet Sauvignon

Hand-picked from the Baxendale vineyard nestled high on Whitlands hills in mid-April, this wine epitomizes careful craftsmanship. Two-thirds of the harvest were crushed into small open tubs, while the remaining grapes were destemmed and fermented as whole berries, ensuring the fruit, with its perfect ripeness and exceptional acidity, shone through.

After a 13-day fermentation, with regular hand plunging to enhance color, flavor, and tannin extraction, the wine was gently pressed off the skins into 3- and 4-year-old puncheons and barriques, where it matured for 13 months.

This cool vintage yields a wine of deep maroon hue, exuding ripe blackcurrant aromas intertwined with blackberry, bay leaf, and spice notes. Rich and flavorful, the wine’s profile is further refined and extended by the elegant influence of fine oak and well-integrated tannins.
