The grapes used in crafting this wine were carefully selected from our esteemed Soldier Settler vineyard nestled in the picturesque Broke sub-region of the Hunter Valley, complemented by contributions from several esteemed local growers. Harvested by hand in early February, the grapes underwent a meticulous process: they were delicately whole bunch pressed and allowed to settle in cold conditions for a period of two days. The resulting pristine juice was then gently fermented at a cool temperature of 14-15°C over the course of 15 days, ensuring optimal flavor development. Following fermentation, the wine was expertly separated from the yeast lees, treated with a touch of sulfur, and lightly fined using skim milk to enhance clarity and finesse. Finally, to preserve its vibrant character, the wine was swiftly filtered and bottled.
This wine presents a captivating pale straw color, kissed by hints of green, reminiscent of sunlit meadows. Its aromatic bouquet delights the senses with a vibrant melody of freshly squeezed lime juice, crisp green apple, and subtle whispers of invigorating kaffir lime leaf, evoking an air of freshness and vitality.
