Montsable Pinot Noir

Sourced from vineyards in the plains and foothills of the Haute Vallée de Limoux, Montsablé Pinot Noir is a true expression of its cool-climate origins within the Pays d’Oc appellation. These elevated sites in Languedoc-Roussillon provide the ideal conditions for Pinot Noir, allowing for slow ripening and the development of elegant aromatics and vibrant fruit character.

Crafted with a Burgundian touch, the winemaking process includes gentle cap management through punch-downs, cool fermentation, and maturation on fine lees in stainless steel to preserve freshness and purity. A portion (10%) spends three months in new French oak, lending subtle complexity and depth.

In the glass, it shines with a luminous ruby-red hue. The nose is lifted and expressive, brimming with fresh red cherries, wild strawberries, bramble, and delicate floral notes. The palate is smooth and silky, with beautifully balanced acidity, fine tannins, and a lingering, fruit-driven finish. Elegant yet approachable, this is a Pinot Noir of finesse and charm, perfectly suited for effortless enjoyment.
