About This Wine:
This wine is crafted from select grapes grown in two Waihopai Valley vineyards and the Tilly’s Block on Paynters Road. The fruit underwent cold maceration in open-top fermenters for three to six days before a warm fermentation. The cap of the skins was hand-punched three times daily, maximizing flavour and colour extraction. After fermentation, the wine remained on the skins for an additional seven to 14 days before being pressed into a mix of French oak barriques (224L) and puncheons (500L), with 25% being new oak. Following ten months of maturation, the finest clones and barrels were chosen.
Soft and supple, this wine pairs beautifully with red meats, flavorful chicken and pork dishes, and game. It shines with chargrilled foods, roasted vegetables, and earthy flavours like beans and lentils, while also complementing toasted spices such as cumin, star anise, paprika, and herbs like oregano, thyme, and sage.
