Kitajima Sake Brewery, founded in 1805, is one of Japan's oldest and most recognised sake brewers, located in the picturesque Shiga Prefecture near Lake Biwa. Their carefully made line is special and one-of-a-kind, with a fuller and fruitier flavour than the typical sake. The Whale of Biwa Lake Sake, named after Japan's biggest lake, Biwa Lake in Shiga prefecture, is brewed from Koji rice and is 70% polished, pasteurised, and unfiltered. This Junmai sake is thick, fruity, and tasty. The characteristic richness of raw koji rice remains on the mouth, giving way to cherry, banana, and pear flavours.
