Jasper Hill Georgia's Paddock Shiraz

Georgia’s Paddock Shiraz comes from Jasper Hill’s original block, planted in 1975, with additional vines added in 1987. Across 10 hectares of low-yielding vines, it accounts for around half of the winery’s total production. The fruit is fully destemmed, naturally fermented and kept on skins for 5–6 weeks before a gentle pressing and 12 months of maturation in French oak.

The fruit is picked across several weeks, allowing some tanks to be harvested early, the majority at optimal ripeness and a small portion at the riper end of the flavour spectrum. Each parcel is fermented, pressed and matured separately before blending, building complexity and balance. Vibrant red fruits lead the palate, followed by layers of spice and fine, chalky tannins that gradually add weight and structure.
