Hermit Ram Zealandia Sauvignon Blanc

This wine is a tribute to the unique essence of New Zealand, crafted from our country's beloved workhorse grape. Sourced from two exceptional sites in the Waipara Valley, the fruit is destemmed and fermented on skins for about six weeks. Additionally, 20% of the grapes are fermented as whole clusters separately and blended in at pressing.

The skins are gently handled to extract maximum aromatics and impart a delicate thread of phenolics, enhancing tension and length in the final wine. Bottled immediately after malolactic fermentation with no sulphur addition, this wine is presented in its purest, rawest form. It’s our cloudy, saline ode to the rugged beauty of the New Zealand coastline.
