Alain Coche, the patriarch, adopted a patient approach, allowing his wines to gracefully mature on the lees for two winters, resulting in classically balanced, textbook Meursault. Today, his son Fabien continues this tradition with subtle refinements, extending the harvest period to two weeks to ensure optimal parcel maturity and incorporating more larger-format barrels alongside the traditional Burgundian pièces.
Crafted from two parcels aged between 30 to 60 years in Meursault and Pommard, this wine undergoes 100% destemming without any pigeage or remontage during vinification. It matures in larger 300-liter barrels and is bottled before the harvest in August to preserve the wine's vibrantly fresh fruit without overt oak influence.
