About This Wine:

Domaine Fabien Coche quietly stands as a gem in the realm of high-quality white Burgundy within the Côte de Beaune, yet often overlooked. Since 1998, the family has embraced organic farming across their 40 vineyard plots. Notably, over 60% of their vines boast an impressive age of over 60 years.

Alain Coche, the patriarch, adopted a patient approach, allowing his wines to gracefully mature on the lees for two winters, resulting in classically balanced, textbook Meursault. Today, his son Fabien continues this tradition with subtle refinements, extending the harvest period to two weeks to ensure optimal parcel maturity and incorporating more larger-format barrels alongside the traditional Burgundian pièces.

Crafted from two parcels aged between 30 to 60 years in Meursault and Pommard, this wine undergoes 100% destemming without any pigeage or remontage during vinification. It matures in larger 300-liter barrels and is bottled before the harvest in August to preserve the wine's vibrantly fresh fruit without overt oak influence. The result is a wine that is both vibrant and lifted, showcasing remarkable elegance and substance for a basic Bourgogne level.

Fabien's approach to vinification for this wine prioritizes finesse, fragrance, and purity, a goal he achieves with remarkable success. This wine captures the essence of its terroir with finesse, delivering a sensory experience that is both enchanting and refined.
