This wine hails from a cool climate, single vineyard nestled in the Derwent Valley of Tasmania, at 42.6°S. Handpicked on a flower day following the harvest moon, the grapes undergo a slow, whole bunch pressing. They then embark on a wild ferment in seasoned demi-muids, maturing for 12 months before being bottled unfined and unfiltered, achieving perfect natural balance.
