Domaine Fabien Coche quietly stands as a gem in the realm of high-quality white Burgundy within the Côte de Beaune, yet often overlooked. Since 1998, the family has embraced organic farming across their 40 vineyard plots. Notably, over 60% of their vines boast an impressive age of over 60 years.

Alain Coche, the patriarch, adopted a patient approach, allowing his wines to gracefully mature on the lees for two winters, resulting in classically balanced, textbook Meursault. Today, his son Fabien continues this tradition with subtle refinements, extending the harvest period to two weeks to ensure optimal parcel maturity and incorporating more larger-format barrels alongside the traditional Burgundian pièces.

While not flashy or dramatic upon release, these wines reward those with patience. Originating from 7 parcels in Meursault, just below the village, this wine undergoes a whole bunch of pressing before aging in a 3000-liter foudre, followed by 6 months in a stainless steel tank. Bottled unfined and unfiltered after 16 months on lees, it transcends its humble Bourgogne Blanc label, offering weight, texture, and character far beyond expectations. Freshness intertwines with alluring Chardonnay fruit, culminating in a wine that is both complex and refined, deserving of recognition beyond its appellation.
