Delatite High Ground Chardonnay

Handpicked in late February, the fruit was whole-bunch pressed and cold settled over two days, without the use of enzymes. The clarified juice underwent wild fermentation in a mix of new and seasoned barrels, before being blended and bottled in November. A beautifully expressive Chardonnay with delicate oak influence and floral whispers of lemon blossom. Striking lemon zest takes centre stage, followed by subtle beeswax and a refined touch of oak. The finish is bright, fresh, and elegantly textured.
