Dalwhinnie The Eagle Shiraz

Exclusively sourced from the illustrious 1977 “Eagle” Block, situated directly in front of our winery, this fruit was carefully hand-picked and fermented as a single batch. Incorporating 15% whole bunches in the fermentation process and undergoing a moderate cold soak lasting approximately 10 days, we meticulously nurtured the development of this exceptional wine. Following pressing, the wine was transferred to French oak puncheons, with 25% new barrels (500L), complemented by 1- and 2-year-old barrels, where it matured for a lavish period of 20 months. Our commitment to excellence culminated in a precise barrel selection, ensuring that only the finest vessels were chosen to showcase this remarkable single vineyard icon at its pinnacle.

Emanating from the glass are distinct aromas of dark ripe berries, gracefully intertwined with nuances of baking spices, sandalwood, pepper, and bramble. On the palate, this wine reveals a slinky and modern character, offering a medium-bodied yet richly flavored experience. Ultra-fine tannins gently unfold layer after layer, unveiling a tapestry of dark fruits, cedar, black plum, forest floor, and truffle. The journey concludes with an exquisitely elegant, long-lasting finish that lingers on the palate, a testament to the timeless allure of this exceptional wine.
