Hailing from the fertile soils of Leongatha, Gippsland, Australia, Caledonia Australis wines are crafted with an unyielding commitment to natural, old-world techniques. The vineyard, dry-grown and densely planted with vines spaced just 1 meter apart and a fruiting wire at 50 centimeters, is entirely hand-tended. Yields are meticulously maintained well below the 35hl/ha (2.18t/ac) ceiling set for the Grand Cru vineyards of the Côte d’Or. With minimal additives or intervention, these wines are celebrated for their exceptional texture and structure.
