Fermented in open vats and hand-plunged, the wine is co-fermented with a touch of Viognier skins, enhancing its floral lift and textural complexity. A carefully selected natural yeast strain from the famed Cote-Rotie adds further nuance before the wine is racked into French oak - 20% new, with the remainder in first and second-use barriques for malolactic fermentation and 20 months of maturation.
