Handpicked with utmost care, the fruit undergoes separate wild fermentations, with approximately 10% undergoing whole bunch fermentation, including a portion of carbonic maceration for added depth. Following gentle pressing, the wine is nurtured in a selection of hogsheads and puncheons, with a subtle 10% new oak influence. Maturation unfolds over 10 months, undisturbed, before transferring to 1200-liter old oak vats for an additional 6 months, allowing the wine to evolve and integrate harmoniously.
