Of the 5 hectares within the esteemed Chateau de Chassagne Montrachet vineyard, Bader Mimeur claims ownership of 2 hectares dedicated to the cultivation of Pinot Noir. Known as 'Champ Derriere' on the Chassagne map, this parcel is situated behind the Chateau, embodying a sense of rustic charm.

The Pinot Noir vines, ranging from 55 to 80 years old, are meticulously tended by hand, ensuring optimal quality. Following harvest, the grapes undergo a precise process: 100% destemming, fermentation in wooden open-top vats, and a maceration period of 2 to 3 weeks. Afterward, the wine is transferred to barrels, with 25% being new, for 12 months of aging. It is then moved to tanks for an additional 6 months before bottling.

This Pinot Noir exudes strength and character, with a robust profile enriched by deep forest notes and earthy undergrowth. As the fragrance unfolds, it gradually unveils the essence of cherries and blackberries in their purest form.
